THE MEMORY: Jolene & her Grandad in the kitchen and his famous Chicken Piccata
RECIPE:
Grandad's Chicken Piccata
- 4 Boneless Skinless Breasts of Chicken Pounded 1/2 inch thick
- All purpose flour seasoned with salt & pepper for dredging
- 1/4 c. lemon juice
- 1/4 c. white wine
- 6 tsp butter
- 1/4 c. chicken broth
- 1/3 c. capers
- handful of chopped parsley
