Oatmeal Lemon Ginger Cookies....


An Adult Cookie....

So let’s talk cookie! I’m not a huge baker and I can hardly bake a cake with out a little help from Betty Crocker… but I gotta tell ya… these cookies are so easy to make and pretty much fail proof , that they give me hope that yes, I too can bake in the kitchen!!!! Oh, and did I forget to add SERIOUSLY YUMMY!

It’s what I like to call “An Adult Cookie” That sounds a little risqué… but I promise, it just means it not a super sweet chocolate in your face kinda cookie! It’s got subtle flavors of oatmeal, pecans, cinnamon, ginger and lemon. The prep and cook time isn’t long either. Just think… if you wake up a little early tomorrow morning, you could be eating it with your coffee before you head out the door. What a sweet way to start your day!


Oatmeal Lemon Ginger Cookies

¾ Cup Butter, Room Temperature

1 Egg

1 teaspoon Vanilla extract

¾ Cup All Purpose Flour

½ cup light brown sugar

½ teaspoon baking soda

½ teaspoon salt

½ teaspoon cinnamon

½ teaspoon ginger

¼ teaspoon nutmeg

2 cups Old-Fashioned Oatmeal

½ cup to ¾ cup chopped peacans


Icing

½ Cup Powdered Sugar

2 Tablespoons Lemon Juice

1 Tablespoon Orange Juice

½ teaspoon ground ginger

Preheat oven to 350 degrees.

Combine in a bowl the butter, sugar, egg, vanilla and beat with your hand mixer for about 2 minutes. In a separate bowl, combine all of your dry ingredients. Add flour mixture to your creamed mixture and beat until well combined. Stir in at the end the nuts, oats & pecans.

Scoop batter into 1 heaping teaspoon full drops and space on the baking sheet about 1 ½ inches apart from one another. Bake in the oven for about 13-15 minutes or until the edges are a nice golden brown and the top looks a little soft.

Icing: Combine sugar, ginger, lemon & orange juice and make sure all lumps from sugar are gone. Place in the refrigerator until you’re ready to use it.

Remove from the oven and allow to cool on a wire baking rack.

Drizzle with icing once cool.

Should yield about 24 cookies.

Chocolate Chips, Cranberries, Peanut Butter Chips, Coconut, Lemon Rind, Orange Zest all can be added to these cookies!
